My version starts with ground turkey breast which is widely available and has less calories than ground beef but you can use any ground meat you like.
- 1lb of ground beef
- 02 tablespoons of olive oil
- 1/2 of a large onion diced
- 03 tablespoons of Worcestershire sauce
- 3 garlic cloves minced
- 02 tablespoons of tomato paste
- 1/4 cup of very strong coffee
- 01 heaping tablespoon of unsweetened cocoa powder
- 1/4 cup of chicken broth
- Salt and pepper to taste
- Chicago steak seasoning to taste (optional)
Start by sautéing the onions on the olive oil. When the onions are translucent add the ground meat. Keep stirring to break them up as they cook. Now is the time to add the tomato paste and continue to stir. Add the minced garlic, salt and pepper. Stir for a minute. Add the Worcestershire sauce, the coffee, the cocoa and the chicken broth. Let the flavors marry and the meat cook thoroughly over low heat. At this point adjust the seasonings: taste the food and see if you would like to highlight any one of the flavors. If you like spicy food you can add a couple pinches of cayenne.
Charred Green Beans
You can also use this recipe during Thanksgiving. A healthy alternative to the green bean casserole... and equally delicious.
- 01 package of fresh green beans already cleaned
- 02 tablespoons of olive oil
- 1/3 cup of toasted and chopped walnuts
- 1/4 cup of apple sweetened dried cranberries
In a pan with a tight lid add the olive oil. When the oil is hot add the green beans. Close the lid and do not touch until they become charred. If you have a pan with a glass lid this is the time to use it.
Once the green beans are soft add the toasted walnuts and the cranberries then congratulate yourself for giving up that condensed soup casserole that cannot be good for you!
