Cod Fish with Tarragon Vinaigrette

This is a quick meal that can be done in about 20 minutes. It helps if you, like me, keep frozen fish fillets in your freezer. Frozen fish is wonderful if well manipulated. If you do not live by the shore and your husband is not a fisherman, chances are that the fish you buy at the local supermarket will not be as good as a flash frozen fillet. You should try to defrost it in the refrigerator but in an emergency I microwave it for 3 minutes and dry it with a paper towel before heating it again for another 30 seconds. It always works.

A tarragon sauce is a winner and it can be done in minutes if you have the following in your pantry and fridge:

  • Olive oil
  • Balsamic vinegar
  • Salt
  • Black pepper
  • Tarragon
  • Plain yogurt

Blend it all together. Taste it as you add the ingredients. You will end up with a refreshing and low cal dressing.

Lazily, I served it with frozen peas. After all it is to be a quick meal!
